We are proud to announce that Ryan will be taking over our shipping department for the Holiday Season. He will make sure all your orders are processed fast and are shipped as soon as possible. We use the USPS for all our orders/product shipping as this is the fastest and most economical source we have found. We offer either Express or Priority shipping. Priority shipping is usually 2-3 days in the United States, but during the holiday season it can take twice that amount of time. Express usually is delivered within 2 days, but is quite a bit more money. Either shipping method can be selected during your store checkout process. Be sure to order early so that all your Celia's Holiday Gifts are delivered in time!

Our unique combination of Chipotle Peppers combine to make a fantastic and flavorful hot sauce that will surely please even the most discriminate hot sauce lovers! Although it has a rating of "hot", this one will not leave you gasping for breath unless your not a "hot lover". True to our tradition, we are about flavor and not about sending you into tears. This one can be enjoyed with all your favorite dishes that require a nice spice to take them over the edge!
Celia's Recipe Of The Month
Tom's Roasted Tomato Soup & Ultimate Cheese Sandwich
•4 cans (14oz) whole, peeled tomatoes (or fresh when in season)
for the onion puree
for the toasted cheese (makes 4)
1.To make the soup, Pre-heat the oven to 400°.
2.Place the canned tomatoes and all their juices in a roasting tray and add the Balsamic, olive oil, sugar and salt. Stir to combine and place in the oven for 25-30 minutes until the tomatoes are broken down and have started caramelising slightly.
3.In a large pot, sauté the onions in some olive oil until they are translucent and fragrant. Add the garlic and fry for another minute.
4.Add the roasted tomatoes, tomato paste, soy sauce and sugar. Stir to combine all the ingredients and pour in the stock.
5.Lower the heat and cover the pot. Allow to simmer for 30 minutes.
6.Remove the pot from the heat and blend the soup.
7.Add the cream and season to taste.
8.To make the puree (I do this at the same time as roasting the tomatoes), place the onions in an oven-proof dish and pour over the stock. Add the salt and sugar then cover and allow to braise for 45 minutes to an hour until the onions are soft and fragrant.
9.Strain the onions (reserve the liquid to add flavour to sauces/stews) and blend with a hand blender.
10.Add the butter and season to taste.
11.To make the toasted cheese sandwiches, mix the mozzarella with the cheddar. Top 4 slices of bread with a tablespoon of the onion puree followed by a generous handful of the cheese.
12.Close the sandwich with another slice of bread then fry in a non-stick pan, over medium heat (add a tablespoon of olive oil or butter to the pan) until the sandwiches are golden brown and the cheese is melted and oozy.
13.Serve the toasted cheese with the tomato soup.
