We want to take a minute and inform everyone about Celia's balsamic vinegars. Unlike almost EVERY OTHER BRAND out there, we use NO added sugars or thickeners. There are no processed sugars, starches, thickeners, colors, caramels, preservatives or other such additives in any of our vinegar products. They are thick from the aging process itself and we sure as heck DO NOT "lengthen" or "elongate" (water down) any vinegar like most other brands. They are straight from the barrel to the bottle. Watch out for those "thicker than belief" brands as they are sure to contain thickeners such as modified food starch or corn starch to make them that way. A good quality balsamic such as ours will have an enormous amount of flavor, be sweet and tangy at the same time, and coat the glass with the perfect consistency called "legs".
The vinegar we use is the highest quality vinegar we can import from Italy by volume, known as an "A" grade vinegar. Our Balsamic Vinegar supplier began their artisan vinegar company in 1889. Located in the Modena area of Italy, the company continues under the watchful eye of the third generation. Prepared using ancient traditional procedures, the process begins with careful selection of the Lambrusco and Trebbiano grapes. They are ideal for the high sugar content required for production. These grapes are pressed and the resulting juice called “must” is heated in copper cauldrons until the volume is reduced through evaporation to about 40% of the original weight. The liquid is then decanted into wooden barrels (chestnut, oak, juniper and cherry) and left to age and transform into vinegar. Our Balsamic Vinegars are a true artisan quality product from centuries old recipes.
We personally hand make, bottle and label every single bottle we sell. We now have strict control over all our products ensuring nothing but the highest quality goes into every bottle we make.
